Chicken Lettuce Wraps Recipe
Ingredients:
- 500g free-range chicken breast or thigh, diced
- 1 tbsp olive oil or coconut oil
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tbsp tamari or coconut aminos
- 1 head butter lettuce or cos lettuce, leaves separated
- ½ cup shredded carrot
- ½ cup cucumber, julienned
- ¼ cup kimchi or sauerkraut (optional, for probiotics)
Tahini-Ginger Sauce:
- 3 tbsp tahini
- 1 tbsp tamari or coconut aminos
- 1 tbsp rice vinegar or apple cider vinegar
- 1 tsp fresh ginger, grated
- 1 tsp honey or maple syrup (optional)
- 2–3 tbsp warm water to thin
Method:
- Heat oil in a pan, sauté garlic and ginger until fragrant. Add chicken, cook until golden and fully cooked.
- Whisk the tahini sauce ingredients in a small bowl until smooth.
- Arrange lettuce leaves on a platter. Fill with chicken, carrots, cucumber, and kimchi/sauerkraut.
- Drizzle with tahini-ginger sauce, wrap, and enjoy fresh.
