Chicken Lettuce Wraps Recipe

Ingredients:

  • 500g free-range chicken breast or thigh, diced
  • 1 tbsp olive oil or coconut oil
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp tamari or coconut aminos
  • 1 head butter lettuce or cos lettuce, leaves separated
  • ½ cup shredded carrot
  • ½ cup cucumber, julienned
  • ¼ cup kimchi or sauerkraut (optional, for probiotics)

Tahini-Ginger Sauce:

  • 3 tbsp tahini
  • 1 tbsp tamari or coconut aminos
  • 1 tbsp rice vinegar or apple cider vinegar
  • 1 tsp fresh ginger, grated
  • 1 tsp honey or maple syrup (optional)
  • 2–3 tbsp warm water to thin

Method:

  1. Heat oil in a pan, sauté garlic and ginger until fragrant. Add chicken, cook until golden and fully cooked.
  2. Whisk the tahini sauce ingredients in a small bowl until smooth.
  3. Arrange lettuce leaves on a platter. Fill with chicken, carrots, cucumber, and kimchi/sauerkraut.
  4. Drizzle with tahini-ginger sauce, wrap, and enjoy fresh.
