Ful Medames Recipe

Ingredients (Serves 4):

  • 2 cups dried fava beans (or 3 cans, drained and rinsed)
  • 3 cloves garlic, minced
  • Juice of 1 lemon
  • ¼ cup extra virgin olive oil
  • 1 teaspoon ground cumin
  • Salt, to taste
  • Fresh parsley, chopped (for garnish)
  • Optional: chopped tomato, chilli, or boiled eggs

Method:

  1. If using dried beans, soak overnight and simmer until soft (1–2 hours). If canned, rinse and warm gently in a pot.
  2. Mash some beans while leaving others whole for texture.
  3. Add garlic, lemon juice, olive oil, cumin, and salt. Stir and simmer briefly to combine flavours.
  4. Serve warm, garnished with parsley, a drizzle of olive oil, and optional toppings. Best enjoyed with pita bread.
