Ful Medames Recipe
Ingredients (Serves 4):
- 2 cups dried fava beans (or 3 cans, drained and rinsed)
- 3 cloves garlic, minced
- Juice of 1 lemon
- ¼ cup extra virgin olive oil
- 1 teaspoon ground cumin
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Optional: chopped tomato, chilli, or boiled eggs
Method:
- If using dried beans, soak overnight and simmer until soft (1–2 hours). If canned, rinse and warm gently in a pot.
- Mash some beans while leaving others whole for texture.
- Add garlic, lemon juice, olive oil, cumin, and salt. Stir and simmer briefly to combine flavours.
- Serve warm, garnished with parsley, a drizzle of olive oil, and optional toppings. Best enjoyed with pita bread.
