  • 1 cup red lentils, rinsed
  • 1 tbsp olive oil
  • 1 onion, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated

  • 2 carrots, chopped
  • 1 zucchini, chopped
  • 4 cups vegetable broth

How to Prepare
