Ingredients
- 1 cup red lentils, rinsed
- 1 tbsp olive oil
- 1 onion, finely diced
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tsp ground turmeric
- 1/2 tsp ground cumin
- 2 carrots, chopped
- 1 zucchini, chopped
- 4 cups vegetable broth
- 1/2 cup coconut milk (optional)
- Salt and pepper to taste

How to Prepare
- In a large pot, heat olive oil and sauté onion until soft. Add garlic and ginger; stir until fragrant.
- Add turmeric, cumin, and carrots. Cook for 2 minutes, coating the vegetables.
